Pecan Sandie Cookies

This cookie is buttery, sweet, tender and  they melt inward your oral fissure (and at that location are NO EGGS). The cookie dough is formed into logs, thus chilled, thus sliced equally good equally baked at your convenience. 

This recipe makes a lot of cookies, thus y'all lot tin also bake part of them and preserve the residual of the chilled dough for afterward inward the week!! It is also a cracking opor-garai recipe because they become proficient equally good equally they are e'er a hitting at cookie exchanges.

2 cups butter (no substitutions) room temperature
1 cup granulated sugar
1/2 teaspoon salt
2 teaspoons vanilla extract
1 teaspoon coconut extract (see note)
4 cups all usage flour
1 cup chopped pecans
