Sesame-Feta Chicken Salad
Ingredients:
2 cups cubed cooked chicken breast
handful Italian parsley, chopped
i “baby” cucumber, diced
1/2 modest reddish onion, diced
iii oz crumbled feta (tomato basil flavored if possible)
i tablespoon nonpareil capers
2 teaspoons tahini
3-4 tablespoons mayonnaise
salt
freshly ground night pepper
zest of i lemon
Directions:
Place the chicken, parsley, cucumber, onion, feta, inward add-on to capers inwards a large bowl. Toss to evenly distribute all ingredients. Set aside. In a modest bowl, whisk together the tahini, mayo, salt, pepper, inward add-on to zest. Spoon over the chicken mixture inward add-on to stir to combine. Serve straight or refrigerate upwards to 48 hours.
Serving suggestion: I served this on lavash amongst sliced cherry tomatoes.
